Foodies Unite #10 (trigger warning food) I PITY TOFU ~ Mr. T (probably)

My son’s favorite lasagna for a diner with the grandparents for his eighteenth birthday (I survived). And five badges with pasta bolognese for him, made two badges of the sauce used in the lasagna. He is going to the gym recently and asked me if I could make some pasta :grinning:

Olive Garden inspired
Minestrone soup - delicious
Salad was great (found vegan quinoa croutons - they were flavorful)
Breadsticks wetent as fluffy as I remember…this was dense. Will have to work on these

Baja fish taco on the left. And a salmon fish taco with some kind on mango salsa and chipotle aioli on the right.

It turned out perfect for my taste :grin:

  • 1 ½ cups plant-based milk - I used almond
  • ¾ cup shelled raw unsalted pistachios
  • ½ cup raw cashews
  • ¼ cup white sugar
  • 1 teaspoon vanilla extract or vanilla bean paste
  • ¼ teaspoon almond extract (I omitted this)
  • 1 pinch salt

Mix ins

  • ½ cup shelled roasted unsalted pistachios, roughly chopped

I used a ice cream maker and may have churned too long as it was thick and not a soft serve.
Think you could blend for a good 10 min and let set in fridge too
