I got to play sous chef/consultant on Eric‘s (my husband’s) second casserole in my “teach Eric to cook casseroles for weekly lunches” project.

Today we designed a Tex-Mex style grilled chicken and rice casserole with a tomatillo serrano sauce with black beans and corn. Oh and cheese, of course. Every casserole he makes will have plenty of cheese. Eric decided to layer it like a lasagna or a layer dip, and I thought that was pretty interesting. Looking forward to checking it out tomorrow.

Today’s quick and easy dinner.
The kids loved it they had French fries to. I tatr mine like this. Swedish meatballs, pepperoni sausage, pineapple, mushroom and tomato. The kids had hot dogs and meatballs on theirs.

Chicken Curry.
It’s actually kind of funny. Before I met all you guys my wife and I ate out more lunches and dinners than we had at home. Especially in Santa Monica.
We use to take turns cooking.
I’d cook one night and Kelly (my wife) would take us out to eat on her cooking night :rofl:
I say what do want for dinner?
She says where do you want for dinner?
We actually think our (my) cooking is better than going out to eat. If we just had a kitchen boy or someone to clean up after me :thinking: everything would be fine.

My hubs was saying the same thing. We probably won’t be going out often ever again, honestly, because we like our food better. You have to take into account that we live in a midsized Midwest town with not really a food scene…if we were back in Tucson that would be a different story. Tucson actually got some designation as a culinary hot spot, I can’t remember the exact title but man, are there great restaurants there. We’re saving a lot of money by 1) cooking awesome food at home and 2) me not drinking hundreds of dollars worth a month when eating out!

Ain’t that the truth… I always tried to counteract that spending by drinking a bottle of wine before going for dinner. For some strange reason it never helped!!! :sweat_smile:

I don’t know what to call this other than delicious! Eric decided he wanted a smaller casserole, so I had a lot of ingredients leftover. So this week my lunches are Tex-Mex chicken salad bowls.
