Very hard to find a good churro outside of MX! As a kid I never knew the difference but my adult family members always complained about them.

Yours looks fab! Mine is leftover basmati rice, chopped grilled red bell peppers, asparagus, fresh garden chives and melty feta and a splash of lemon basil vinaigrette. Practically the same today, finishing up leftovers, but a big handful of torn basil from the garden from plants growing out of control! This will be lunch tomorrow too, since my portion grew way too large as I assembled it.

Tinga is probably one of the simplest Mexican recipes out there. Just Google it and you’ll find recipes! The main issue is making it to suit your taste. Don’t forget the chipotles en adobo. You can eat it on tacos or like we do with a dollop of sour cream with tortillas chips.

Tonight we got lazy and are enjoying BLATS. Bacon, lettuce, avacado and tomato lol. No fancy plating here.

I love baking bread and today I made wheat bread for the first time in decades.

Again no fancy plating but my grandson just rushed in to tell me the bread is “bussin” so I’m happy :blush:
