Lunch at the office.
Tuna on the mini chia/grain fermented bread with smoked cheddar in toaster oven open faced to melt & brown the cheese, then put them together with pea shoots for a yummy sandwich. The melty, smokiness of cheddar & pea shoots made it so good

Minestrone soup-ish. I managed to cook something! I’m surprised fresh ingredients that I bought last week were still good. I cooked the pasta separately, which isn’t ideal, but I need to freeze a bunch and pasta does not freeze well. It’s sooooo tasty! Oh and not pictured are fresh diced tomatoes.

I think I have about 30 cases of instant oats in my office. There may be more. They are all “just expired,” so I can’t donate them. When I was in grocery, I rep’d four different oats manufacturers. They are all gluten free. So, maybe I should start making some cookies, or breads, or SOMETHING.
