I had the same thing for dinner tonight. But it was the avocado ranch salad kit. It was great and ya I ate the whole bag, too. I’ll be doing those more it’s just too easy after my long work day and especially on my gym days. Next time I’ll prolly mix in some tuna to get the protein content up.
I love the avocado one. I like to add chicken. But I bet tuna would be good also. There is one that has sunflowers in it and that’s the best one I’ve had so far
I was actually thinking of tagging you on it. Cuz I remember you don’t do meat. But I didn’t think hubby would go for chicken sausage.
Spaghetti of course.
I tossed the zucchini in olive oil and Italian seasoning and broiled it about 5 minutes.
Meanwhile:
Sautéed about 10 oz of chicken sausage with Italian seasoning.
Added a can of crushed tomatoes some chicken stock concentrate, for flavor, salt and pepper and a little pinch of sugar. Let it simmer 5 or 10 minutes.
Then stir in and melt some butter and a little sour cream.
Mix in the spaghetti and zucchini.
Oh save a little pasta water to add at the end if sauce is too thick. You can thin it out with pasta water.
And I mixed in some Parmesan cheese.
And of course topped with Parmesan.
It was really really good. Don’t know if it’s because we’ve eaten out so much lately or what.
I don’t care for ground Turkey either.

But I don’t mind the chicken sausage. It’s pretty tasty. And my wife likes it. She’s the fussy one here.

I think it was in the dressing. It had a strong taste of ginger and sesame. I’ve never had ginger that I know of. And maybe it was just making my taste buds dance lol I didn’t like the feeling. I have a condition that causes edema so any type of swelling is a halt for me.
I don’t put sugar in mine either. Only time I put sugar in is when I make a Pumpkin spiced latte. I miss regular milk, even if rice milk tastes a lot like it.
Omg that looks so great! Even at 8 am. A restaurant in the mountains in Durango Colorado use to serve up complimentary jalapeño cheese rolls and they were the best thing ever. I love bread. Definitely a weakness of mine.
In Sweden we’ve got a dish called Swedish cheesecake. Svensk ostkaka. Mostly seen as a dessert, served with whipped cream and jam. But my mother always served it for simple summer suppers in our house.
It’s made of rennet, wheat flour, eggs, almonds, bitter almond and cream.
As you can hear, not something that I can eat. It used to be my favorite food as a kid. My 9 y/o also loves it. The rest of the family doesn’t. So today when it was only me and the kids we decided that it’ll be a good supper. The 11 y/o got pancakes.
And y’all know my standing point by now. If I like it, there must be a way to make it gluten and dairy free so I can enjoy it. Today I found the perfect recipe to make it. It took hours but the texture and the flavor is so close to the real deal you can get. So today I’m presenting Gluten-free dairy free Swedish cheesecake. The small paper below the foil containers shows how it originally looks.

Even with my feverish cooking before surgery I realized I had to supplement with some store bought but freshly made soups. Mixed with leftovers. Today’s culinary exploration is this soup with left handed chopped leftover green beans, pearl onions and red potatoes. At least I can still stir right handed!
It looks delicious. And I wish you a quick recovery. Until then it’s always a good practice to do thing’s with “wrong” hand. Personally I do equally with both. Even writing, my 9 y/o is the same, when he gets tired of writing with one hand he just switch to the other one.
