Pictures don’t do it justice. Epic Rueben with the corned beef I baked last weekend (it’s still good, right?) and homemade Russian dressing.

You got your rueben upside down. :upside_down_face: That would and still does drive me so crazy when it’s served like that. :grimacing::grimacing::grimacing:

Got to get my ass back out in the snow for another walk. I’m stalling.

Hubby assembled it and actually baked the sandwich open faced, so there is meat on both slices of bread and muenster (also breaking the rules), and then I had to put my sauerkraut and dressing in the middle! Sacrilege! But delicious sacrilege…

Still sounds good.
It’s hard being a restaurant pro and going out to eat. The number of Reubens I’ve received with soggy bottoms because of the wet kraut and Russian dressing seeping through the bread on the bottom. Where if they just had it on top that wouldn’t happen. Just drives me insane.

Yup. Just close your eyes :wink: I do have certain things, like Mexican dishes that I am super picky about and hubby says in general that I am judgey wherever we eat. And says, “Yes, we all know you could do it better.” Funny guy.

Quinoa “pilaf” w/ chicken breast

  • Quinoa cooked in unsalted chicken broth
  • Chicken breast, cut to bite-sized pieces, pan cooked in olive oil – about halfway through, add asparagus, garlic, and chopped walnuts.
  • In a bowl, make dressing by combining olive oil, white wine vinegar, dijon mustard, salt, pepper.
  • Once quinoa and food cooking in pan are done, combine altogether w/ dressing in bowl. Add dried cranberries. Toss to combine.

Simple enough but delicious and healthy. Cranberries are the best part as they plump up and absorb the oil/dressing…bursting with flavor.

Also, rare occasion of eating off a plate.

Made breakfast for my husband (mine was similar but minus the good stuff) and I think it looks like a muppet! Egg scramble with sausage, onion and tomatoes. And cheese.
