@Jftself yup. The next thing to try is a vinegar based dressing. You can make your own but there are plenty you can buy, too.

I needed some cooking therapy so it’s a good thing I had lots of chopping to do for FIL’s birthday get together It’s supposed to be a wild rice dried cranberry & pecan salad but I swapped the latter for toasted sliced almonds. I’m thinking I’ll add those once we get there, along with the roasted pepitas so they’re nice & crunch before serving.

Thanks! I had a little nibble and it was pretty tasty! I was nervous how it would turn out, haha… I don’t use parsley often, but it really tastes pretty lovely. I bet it will be better with toasty almonds & pepitas/pumpkin seeds!
