Really simple dinner tonight with some premade stuff from Trader Joe’s. TJ’s Chicken meatballs with grilled zucchini and eggplant. Plus some grilled portobellos with TJ’s vegan pesto and vegan feta inside. Felt a little like cheating…but…I didn’t really have it in me to cook anything more from scratch so…I’d say it turned out well for me!

I had enough wraps for three beef & cheese burritos. I intended one for kiddo and two for hubby for when he was to get home later. I was so impressed kiddo ate two! I sacrificed hubby’s second and he got a salad to fill him up (kiddo won’t eat salad)
