What is the strangest or most unconventional ice cream flavour you ever tried?
Rosemary ice cream with a balsamic reduction. It was really good!
Floral or herbal ice cream sounds great. I like boba tea, that must be close…
We have an Avocado Festival every Summer here, and once I tried avocado ice cream. Pretty interesting. I wouldn’t say it really tasted like avocado, though. It was creamy…not very sweet. Very subtle flavour. It was like eating green vanilla ice cream.
Lavender ice cream would work, too.

Me and my husband had an ice cream café a few years ago. The brand we sold always have the flavor of the year, which is usually a bit unconventional. Our first year it was beetroot/black pepper.
It sold like crazy (We live in Sweden)
I would definitely try it
It was like sweet and peppery at the same time. Only downside was that it was made of beetroot so it colored everything it came in contact with deep red.
One of my favorites (“Berthillon’s”):

Medicinal ice cream. Love it! Wonder if they make Ibuprofen popsicles?
Chocolate flavored should count as a medicinal Ice cream. Especially chocolate ice cream with cherries. I can never forgive Ben and Jerry’s for taking away the Cherry Gracia flavor.
I love lavender and lemon cakes. Have to try and make some flavored Ice cream for next spring now.
Lilac would work too,it makes a great lemonade.

It looked like wet cement but was delicious
Goat cheese sorbet. I hope sorbet counts. It was salty and delicious and not too sweet and I would eat a gallon if I could.
Parma Violets
I live in a region where pumpkin seed oil is very common. There are icecream creations with it, as flavor and as topping. Vanilla ice topped with pumpkin seed oil, nuts and roasted pumpkin seeds is delicious!
