My daughter baked gingerbread, I’m sharing the recipe below:
33dkg flour
10dkg powdered sugar
1tsp gingerbread spice mix
1tsp baking soda
10dkg butter
1dl honey
1 egg
To make the gingerbread, first mix the flour, powdered sugar, spice mix and baking soda in a large bowl. Then add the slightly melted butter, honey and egg. Mix and knead by hand into a smooth dough.
Roll out the gingerbread dough on a board sprinkled with flour to about 1 cm thick, then cut out any shapes you like with Christmas cutters (star, angel, pine tree, bell).
Arrange the gingerbread cookies on a baking sheet lined with baking paper and bake in an oven preheated to 180 degrees, using top and bottom heat, for 10-15 minutes.
Cocoa rolls (cocoa snails):
not the easiest and quickest one, but it’s really tasty, it used to be the ultimate pastry in my childhood.
Dough:
0.5 kg fine flour
2.5 dkg fresh yeast
2 tablespoons wholemeal flour (can be omitted)
1 egg yolk
1 egg
2.5 dl milk
4 tbsp sugar (beaten)
7 dkg butter
1 pinch salt
Filling:
100 g unsweetened cocoa powder
100 g powdered sugar
100 g butter
Mix the flour, a pinch of salt, sugar and crumbled yeast, then add the whole egg and the extra egg yolk and start kneading. Add the milk, and when you have a smooth dough, add the room temperature butter. Continue kneading, after about 10 minutes the dough will not change. Don’t be afraid, it will be stretchy and sticky, but that’s exactly how it should be. Cover the dough with a kitchen towel and let it rise until it has doubled in size in about an hour in a warm place. Roll out the risen dough on a floured board into a rectangle and very thinly. Brush the rolled out dough thoroughly with melted butter. Sprinkle the sugared cocoa powder on the butter. Roll the dough up medium-sized. It shouldn’t be too loose, but it shouldn’t be completely tight either. Next comes the cutting: cut off 4-5 cm pieces. Let the cut-up rolls rise for another 20 minutes, lightly spray the tops with milk, and then bake in a preheated oven at 180 degrees for 20 minutes (they will still grow in the oven).
