They say at 10,000 hours you’re a master at your craft and I’ve definitely done 10,000 hours of washing dishes and pots and pans and whatever else over the years. I don’t know if that’s good or bad. But regardless it is what it is

When it’s really busy I jokingly have a pile or section called the F that pile!! And I come back to it later because it’s not worth my time when I’m really busy. Hot water is my best friend at work and this scraper I use depending on how bad something is burnt or caked on. The worst is bacon or chicken trays and also the grit / egg pots. But I rarely scrub pots I usually soak them in hot water and come back to them. I usually work by myself but that’s because I can handle it. It’s only actually overwhelming if we have a catering event going on as well and a lot of prep work because then I have restaurant dishes
coming back, prep things and catering things that’s when the multitasking really kicks in. To be honest I prefer to work by myself because usually if I’m working with another employee there’s a good chance I have to come behind them to fix things or do things properly. There is six dishwashers but only one dishwasher I prefer to work with but that’s because we work well together and we have a good system. One thing I’ve learned after years of doing this is that even when I come in and the whole entire dish pit is stacked to the ceiling with things I remember there’s always an end to the pile. If I get overwhelmed it’s just because of my perfectionism not because the job is actually stressful. Or it’s because I care. I also don’t wait for the servers to bring things to me I go out to the restaurant to get everything same with prep. It’s like this game where I have to be 100% caught up. But I’ll say one thing as far as home I have plastic everything. Plastic cups bowls forks plates everything plastic.

Ps: The first thing I do when I walk in the morning is I scan the whole entire dish pit and I can tell how busy of a day I’m going to have by what is missing. If that makes sense and I also can tell by the employees there of what type of things they are going to bring back to me to clean depending on who it is.

Omg…ugh :tired_face: My ex did that once while he was watching our daughter at my house! He cleaned (which was needed), but also ā€˜put away’ things I used everyday and went as far as hanging up paintings! That shit blew my mind :exploding_head:

How bout people who don’t put things back? Nothing is ever in the same place twice at work, as of late! I’ll put something ā€œwhere it goesā€ and there’s a 1/10 chance it’s there tomorrow :face_with_symbols_on_mouth: Might be why we’re always running around like headless chickens? :thinking: And most of the shelves, cupboards, and closets are labeled! So I’ve come to the conclusion that 90% of the staff is illiterate :expressionless_face: When I do waste my time organizing, I always hear the same song. ā€œOne of these things is not like the other, one of these things just doesn’t belongā€. Sesame Street people! You should’ve learned this :face_with_steam_from_nose:

Friday was crazy busy bc we opened outdoor seating. Only one dishwasher was scheduled and he’s only worked there for one week! By 7pm, the dish pit came to a standstill and no trays could go back. No progress for 2 hours and we were running out of places for dirty trays. At the end of the night, we find out all but one of the kitchen staff left! We basically guilt tripped him into staying. Then one of our servers jumped on the clean side bc he asked where something went while she was in the kitchen. I mean, how tf are dishes gonna get put away by someone who doesn’t know where anything goes?! :face_with_raised_eyebrow: We could’ve left at 9:30, but split the enormous amount of work between 8 of us and got it done by 10:30. If not, the guy would’ve been there until 3am! Or walked out and never looked back, bc…WTF :astonished_face: Right?! I’ve never seen anyone get fucked over that bad.

I guess he came back to his next shift? That’s definitely messed up. I would never leave a new dishwasher by himself like that on a Friday night. It’s crazy the workforce these days especially as far as dishwashers. Like I said in previous posts we have six dishwasher’s where I work but only one dishwasher I actually want to work with Because he has good work ethic and can multitask and just gets the job done. I told my managers to not schedule anybody with me except for Friday and Saturday and I can handle every other day by myself. I’d rather just get it done myself then come behind people to re-run silverware or re-clean pots or come behind my other dishwasher and change their water because they don’t care. And I deal with the same thing my help always wants to run out the door as soon as their time is up and I don’t even fight it anymore I’m just like all right I’ll get the hours and I’ll get it done myself.

One of my biggest pet peeve or actually FRO Is that most of the other dishwashers where I work at when they get the dishes caught up they disappear for 20 or 30 minutes and I’ve tried to explain this is the time that we change trash cans, Squeegee the floor, clean the walk-in, organize check the line and so forth because that’s how we stay caught up and on top of everything but it’s like mind blowing to other people that’s what you’re supposed to do

But then these same dishwashers will bitch and ask why I have a set schedule and I only have to work lunch shifts and no nights and make the most money lol

The turnover rate is insane where I work. We have one great dishwasher, but his gf recently passed away and it’s obvious he’s going thru it :cry: The other good one is a 17yo who can only work 2 days a week. All the rest seem like they’ve never washed a dish in their life before this job!

This shit can FRO! I tell them all the time to change their water, but they don’t want to if they’re in the weeds. But honestly, that’s when they need to! It only ends up with more work later! We check plates before putting them out for buffetst/etc, and we know who washed them by either getting a perfect stack from the closet or having to send half a stack back to the dishwasher. Annoying :expressionless_face:

Between the two of us we could probably write a screenplay for a restaurant comedy movie. I’ve worked at like 10 restaurants and there pretty much all the same. But yeah changing the water takes like 15 or 20 minutes so I’ve just learned to Time it out Like right before lunch rush and then I do it at like 2 o’clock before change over and all the stuff comes back from the line from changing from lunch to dinner. Working in the dish pit is all about timing and learning what is most important and what is not. I always get the larger stuff done first and certain things I know that they need the most of.

The other hard dishwasher told me the story recently where one of the slacker dishwashers told the head chef that I’m doing too much. And I guess the other hard dishwasher told me that the head chef said we’re not talking about Trevor we are talking about you. lol what does doing too much even mean. Shit is crazy

On a different subject a few of the servers have been telling me I need to go to a better restaurant and become a bar back because of the way I move around the restaurant and Hustle I don’t feel that Would be triggering or anything like that I just don’t think probation would be OK with that. But it’s something to consider. We just don’t really have a need for that because we’re more of a restaurant than a bar atmosphere. We have a full-service bar but I guess we’re not busy enough to have that position. And if I did this I would probably get a couple more dollars an hour and wouldn’t be soaking wet all day. My current job wants me to do prep and it’s something to consider as well but I really need to be moving around all day and standing in one spot is difficult or anything tedious

That is so shitty behaviour from the kitchen crew in glad you guys didn’t leave this new guy in the lurch! Man I’d be so disappointed if that were my crew, that would never happen in my place (but we’re only a bar so it’s not exactly the same, but we do not leave each other in the shit).

It’s definitely cool to be able to relate to other people in restaurants and it doesn’t matter where you’re at it pretty much is the same thing but like you’re saying some restaurants have better managers or some bars have better managers and they have a better hiring process. The things that have been said to me by my management is insane but I just let it go in one ear and out the other because it’s a steppingstone and I’m not stressing. But I plan on going back to school in November so I’m definitely going to consider bar backing While I go back to school to get my Wage up. I literally only have one speed and that’s fast as hell. I have this little personal game inside of my head that I have to constantly be caught up on everything. A couple of the servers that suggested me going to a couple places they listed was just out of respect because they know I have maxed out my money where I’m at. Thanks for the vote of confidence. Like I said they want me to do prep cook but I think that would be really annoying I need to be hustling and moving all over the place. But this is the point with sobriety I have options and I’m healthy and have lots of energy. I’ll definitely make sure to come on here and post any future restaurant stories that can FRO . Though I’m almost thinking about creating a restaurant thread for people that work at restaurants because it seems to be Quite a few people on here

That’s definitely rough. And I completely understand if you don’t take any medication because a lot of them can make you pretty drowsy because I have allergy problems as well and I don’t really take anything. Sometimes I use nasal stuff that isn’t that bad but all of the pills make me really tired. I definitely understand the struggle

I’m outmedicated, I’ve tried everything on the market in my life including injections and cortisone. Best result was short term relief but no sustainable effect paired with heavy side effects.
So I stick to my high dosage Vit D and suffer when the pollen load gets too heavy :face_with_spiral_eyes:

Well it probably doesn’t mean much but hang in there. I definitely understand.. the problem with medication’s for just about anything is that they might solve one problem but they create five more problems With whatever you’re taking. So it’s not worth it. It’s like the list of side effects is worse than the original problem lol
