Been a while since I’ve posted, been a while since I deliberately cooked a vegan meal! Tonight’s curry was a hit: Thai curry paste with extra hot curry powder, tomato paste, sautéed that with carrot and spinach, added coconut milk and lastly simmered with some seasoned baked tofu. On brown rice.
