Good evening everyone. I’m seriously contemplating going vegan. Not 100% but maybe 1 day a week. I currently live on fruit and veggies with maybe 3 portions of fish a week. Plenty pulses and homemade soups. I do eat dairy.
How did you all start ? Did you jump right in or take a more gradual approach?
There some beautiful dishes on here that I’m going to have to Google.

I was vegetarian for about a year but after that I started with a 30 day Vegan challenge that never ended.
Honestly, when I learned that the egg and dairy industries were just as cruel (if not more cruel) than the meat industries it was a pretty easy transition. Also, the environmental benefits made it much easier too. It’s kind of hard to not use fossil fuels in our lives (oil and gas is in so much of our every day lives) but making a more environmentally friendly meal is so easy to do.
Make the changes you can when you can and you will be making a difference.

I was a vegetarian for 13 years ore so and decided to skip more animal products beside the fish and meat.
At first the milk, eggs and yogurt has to go. Then I skipped the honey. The hardest was the cheese
I eat vegan for I think 5 years now. But when eating out I eat vegetarian because otherwise I got salad and bread.
Take you own tempo Col, there are no rules. Only your own rules.
Somethimes I eat cheese. People around me say: you may not ate that because you eat vegan!
Excuse me? Who decide what I may ore may not eat?
So don’t listen to others, make your own rules in your own tempo. Everything that you skip out of your menu is a win for the animals and the environment!
Great advice @SoberWalker . I shall take on board what you had said. Yes I think I can do this . I’m looking forward to giving it a go. I shall have a couple of days this week easing in and looking at different products and recipes and reading a whole lot more on the subject. Then give it my all from monday.

Thanks @VSue . We are going to have a dabble the rest of this week then go for it from next monday. I’m looking forward to it. I’m going to check all my vitals before I start and see how they compare after a few weeks.
I started vegetarian when I was having some serious GI issues after eating meat. I felt better after ~5 days or so and never looked back.
After learning more about the dairy industry I went vegan. I never really enjoyed eggs so that wasn’t a “sacrifice” for me.
Honestly now (depending on your location) there are so many vegan options/products at the grocery store that it’s pretty easy. There are tons of cookbooks, recipe blogs etc. Sometimes recipes over complicate things — you can always start by making your favorite meal vegan! In my opinion the best way to prepare tofu is the freeze it, thaw, and then press out the liquid. The i e crystals make holes in the tofu so it’s a bit fluffier and it incorporates flavours better.
Also to get a nice crispy coating all you need to do is coat it in some corn starch and fry in oil.

I cut tofu in cubes, then fry it a bit with olive oil until it gets coloured, then I finish the cooking with some soy sauce, and sometimes I add spices. 5 mn. And it’s ready to be mixed with any vegetables and pasta or rice or whatever you can think of. And…it’s delicious!
