I gained a new appreciation for cooking when I became vegan. It’ll be 6 years in January. I love exploring new ways to feed my body the
nutrients it needs to stay healthy. :smiling_face_with_three_hearts:

I like to save all my veggie trimmings. Freeze them until I have enough to make a broth. Then you can cook your rice, quinoa or grains with it for additional flavor. Or use it in soups. Beans taste amazing cooked in some broth with some sautéed bell peppers and onions. My secret is creole seasoning. I add it with my other seasonings. Just enough to make people wonder what’s happening here but not be spicy. :grimacing:

This has become one of our favourite dinners of late. I even made the tofu from scratch! My favourite part of the meal is the pickled mushrooms :mushroom:

Dairy is the hardest for me going vegan. Specifically ice cream. I’ve tried plant based ice cream. Some are good, but it’s not the real deal. I love other plant based dairy substitutes, specifically vegan creamy dressings made from cashew.

Vegan for almost 15 years! It is a lot easier now, the options are endless. Truthfully, I still survive on beans and tofu.

I don’t have a picture, but during my time attempting veganism i ran across a lentils pecan taco meat that i now make often. You can Google lentils pecan instantpot taco meat and probably find it. While I’m not vegan I did stop at a great vegan restaurant and had the best dish. It was roasted beets with a horseradish crema, topped with turmeric panko crumbs. It was amazing!

I love risotto and this one is the best recipe I’ve ever made. I did use vegan Parmesan rather than cashew cream….I just couldn’t NOT have the Parmesan flavour.

Very nice. Dinner sounds awesome too. Thisvis nango season so im all about anything mango :wink:our local indian store gets the most delicious mangos
I started bread makimg a few years ago qhen my favorite bread vendor left the farmers market. My go to are olive and cranberry walnut. When i first heard she was leaving the market i bought 4 loaves and froze them (well wrapped)…surprisingly they stayed fresh. Steam oven…give it a try - hope it works.
I agree- hope more people start posting here…i had stopped thinking i was monopolizing the thread :grinning:
