No veggies yet. However, Sundays I have meetings 7-10a. I don’t HAVE to sit in on them but I do, every Sunday.

Easy meal today. Mushroom omelette on cheese sandwiches. Cucumber and tomatoes with avocado mousse on the side.
Shakshouka for tea, with eggs, courgette, peppers, onions and some goats cheese for the toasted bread dipping vessels.
I made a Spanish tortilla to take out walking tomorrow using leftover chip shop chips… Will report back…
I am maniacally focused on knowing ALL food things. I had to look up both Spanish tortilla AND chip shop chips. End of story - JEALOUS!
No cooking today, so far. However, I will share that I learned about sulforaphane yesterday. Major in researching information in the brain, primarily for aging, but also with injury. Anyhoo…You should learn about it. It exists in arugula and probably spinach. Broccoli sprouts have the highest level. I have never seen nor bought them. I assume they are easy to grow.?!
We didn’t finish these but I’ve heard they make a cracking Spanish tortilla. So I fried loads of onions and then got these all toasty before adding eggs and cooking to set really slowly… I’m hoping it will be nice to eat after a long walk.
I bet they do! As soon as I saw the picture of Spanish tortilla and then how chip shops make chips, I was pretty damn impressed. ![]()

I definitely didn’t cook today. I am happy that I will be in this house alone tomorrow morning. So, I had coconut cacoa and rice chex topped with a banana. I do not like that granola as cereal. I have just snacked on it - prefer that but it’s my last cereal. ![]()

I got this Lemony Arugula Basil salad mix with almonds today from TJ’s
And I’m reheating frozen leftovers which are way better than those meals I been ordering the last few weeks. But more dishes
oh well. Worth it today.
