Good morning from Finland. Breakfast couldn’t get any more traditional. Oatmeal with blackcurrants from our garden and milk. If you stop giving Finns oatmeal, half of the country stops. Deny us coffee, and the other half will join in

Sweet chili glazed pork meatloaf tonight, with sesame roasted veggies. I wish they were all sugar snap peas. I just love sugar snap peas.

I make two different versions of salmon and Spinach pasta, one like this one with sourcream and heavy cream, lemon herbs and dijon mustard.
And another one with feta or serbian cheese

That’s right, we need our Fika to brighten the days and socialize. There’s a classic joke here saying that all the best ideas is created during the Fika breaks. And there’s no way to break the ice our cheer people up like Fika. Tried to explain and show my American friends and family how to do it, let us just say that they need more practice.
Yes I particularly like the convenience of everything frozen together and I don’t have to shop for this and that and clean and chop. It’s a bit expensive but what I’m saving on good bottles of red wine I can manage. Getting lazy in my old age.
