Simple soup and salad tonight.
Salad with avocado and ranch dressing.
Legal Seafoods New England Clam Chowdah.
And the Tabasco is for the chowdah.
Don’t knock it til you try it and you should try a dash or 2 of Tabasco in your New England Clam.

Pa came over a few hours ago with 4 kg carrots and just as much beetroots, onion and cauliflower. Because it was on sale at the farmers market in his village. I really appreciate it, but I need some ideas on what to do with it. Any suggestions besides beetroot juice will be deeply appreciated. Thanks in advance.

I love beets. I roast them. Or steam in instant pot and use in salads. One I do with apples, Dijon, goat cheese, walnuts, a touch of maple syrup, olive oil, apple cider vinegar

Also beet and carrot muffins

And I throw in a salad with greens and quinoa, veggies etc. This one I tossed in hard pressed cottage cheese for protein

When we where running our Ice cream shop we served beetroot and black pepper Icecream. I know it sounds strange but it was delicious. Unfortunately it wasn’t home made so I have no idea how to make it.
I’ve only had oven roasted or pickled beetroots before :blush:

Really late dinner today because of the scouts. The boys wished for frozen lasanga that you heat up in the oven, so I bought them one. Couldn’t find any gluen and dairy free one for me so I did some gluten and dairy free cajun salmon pasta.
Was it delicious? Nope
Easy to make? Also no
Was it spicy? Heck yeah, because I dropped the cajun spice jar.
Will I do it again? Probably not.

If you guys want to I could actually send you some Swedish sweet treats and stuff like that when the borders are open for abroad postal service again. I usually trade with my American family and friends, so I’m sending a lot of packages to US anyway. Wouldn’t be to hard to make one for your family at the same time. :blush:

Dairy and Gluten-free potatoe salad, smoked ham, shredded carrots and FINALLY bread that tastes like the real deal, it was shamelessly expensive but I don’t care. I’m in food heaven.

Making chicken stock today. Found out my chest freezer is arriving on the 29th - I’ve been waiting for months! I can’t wait to cook like crazy and get stocked up for the winter. I’d love to have a supply of homemade stocks and soups, more than fits in my little fridge freezer. So excited!

The finished chicken stock! Gorgeous rich color, it has a great flavor. It pays to get a fresh, local, free-range chicken. The meat will be a special treat for my puppies this week.
