I actually do a reverse sear. Get it medium rare, then sear it! I have a smoker. That one came out closer to medium tho :man_shrugging:

Truly my fave. Is that Nova Lox? Or Smoked Scottish Salmon? I love them both. When I was a waiter people would ask me the difference between Nova Scotia Lox and Scottish Salmon. I would tell them the Nova Scotia Lox swim upstream and walk away before anyone could ask me another question. :rofl:
Looks like you got Scottish Salmon there. I make a mean lox and onion omelette.

This is Atlantic; Nova Scotian (my home province). This is from Bay of Fundy. I’m constantly on the hunt for smoked mussels and smoked oysters that aren’t from China (nothing against China but I prefer to support more local). I did find a seafood company on the west coast that ships (plus frozen fish, etc) called St. Jean’s Cannery & Smokehouse in British Columbia. Pricey but tasty! They ship to USA too.

Sorry guys, can’t resist the joke. We found BooOreos in the store today. Halloween themed food and sweets are rare here so I bought them for the boys. Love the spiderweb pattern :black_heart::maple_leaf::fallen_leaf::jack_o_lantern::ghost:

Here’s my menu for the next month. Good hearty winter classics, everything made from scratch at home (as per usual in my kitchen) and massive portion sizes because… What’s the point in putting something on a plate if you can’t enjoy eating it?

just whipped up a simple tuna pasta salad… You know what makes me laugh? That people use the term “tuna fish” when talking about tuna… Why the fish lol? It’s not like we all go around saying chicken bird, beef cow, pork pig… Lol :joy::joy::joy:

I’ll start with the mushroom tart, no truffle oil please… that fake truffle flavour is not pleasing. If you have fresh truffle please shave generously on top instead.
Next I’ll have the sirloin steak, rare. Genuinely rare.
Add two Yorkshire puddings to my order too, please.
