@Dazercat thank you! I’m really pleased with it. The only thing I messed up on was putting twice the number of almonds in it. I’d toasted twice what I needed for what I’m going to make for the election party and was so tired I forgot and put it all in

I love chicken salad
And I’ve had it for breakfast before too. On an English muffin. I’m a purest on my chicken salad. DO NOT I repeat DO NOT put anything funky in my chicken salad. Celery and Mayo is all one needs.
If it wasn’t for the chicken salad at Katz’s deli in Austin Texas I would not be married to my wife. Hell of a story.
@salty I used an organic cream cheese. Honestly didn’t come out as smooth as I’d like because the cream cheese was less soft than non organic. I’d probably use non organic. It’s an amazing treat. Totally try it!
@Dazercat it was the quickest thing to make because the salad was already done I like to put high end pickles in instead of celery then add a little of the juice and salt. Snobby pickles are usually really flavorful so it works great. I’m actually going to make English muffins today! I’ll post pics!
Some lady complained about there being Turkey in the chicken salad and asked for the manager. That’s me. I politely said “So?” That lady was my wife’s roommate. She told my wife she met the perfect guy for her. He looks 12 and he’s got big feet. She brought future wifey in one day to meet me. If that chicken salad didn’t have Turkey in it I don’t know how my life would have turned out.
Of course there was!! We didn’t waste anything there. Whenever Turkey was carved or slice into a sandwich the pieces that crumbled on the cutting board were gathered and put into the chicken salad.
Oh and all the dark meat too. Everything was cooked fresh. Huge menu. And yes there was cottage cheese in the blue cheese too cheap filler.
Noooooo! They should have called it poultry salad. That’s just fowl. Gosh I need to stop with the puns. However, being the introvert I am, I couldn’t send it back. I’d quietly eat my imposter sandwich
It was a great chicken salad. Like I said everything was freshly cooked. I couldn’t tell the difference. But being a Kosher style deli. And my wife’s roommate was Jewish and from New York I guess she could tell. Every once and awhile someone would mention it.
When customers asked about our tuna salad we’d say it was more like celery salad with essence of tuna.
Speaking of tuna. You like tuna melts? I love a good tuna salad melt. Try making a tuna melt with Muenster Cheese . It’s a great underrated cheese for a tuna melt.
A nice way to support my local food producers in these hard times is getting this surprise box delivered to my front door. Not expensive at all and this will last me a week for sure. First thing I’m using today is the sprouts as they look very inviting to me.
