Albóndigas! I think I’ve finally got the touch, and it requires a light one to get these right. I cherish our family recipes, passed down by generations - not complicated but subtlety is required.
Yesterday was Soup Saturday, and I’m having another mug tonight. Mushroom Soup with 3 kinds of mushrooms, and veggie bake on the side.
Last year I would have poured in a 1-1.5 cups of white wine into the soup. (Gee, I wonder what happened to the rest of the bottle as it simmered? ). I didn’t want to set myself up for failure, so last night I adapted with coconut milk and a bit of ginger - a different twist!
And I shamelessly polished off an entire bottle of grapefruit seltzer.

Soup and sandwich for dinner. The soup was store-bought but was fantastic! It was a Thai coconut curry chicken soup.
Cheese omelet with farm fresh eggs, smothered with spinach, baby bells, onion, GARLIC.
Homegrown bacon and gluten-free toast.

This is one of my favorite types of breakfast, though I’m usually too lazy to do the bacon. Just a quick omelet is so satisfying.
I have been wanting to make a mushroom soup! I need to find good mushrooms first…and that veggie bake looks so inviting.
And many of you know how much I love Ginger Beer. This place has Ginger Lemonade and it has KICK and BITE. I have to learn to make it. I don’t ever buy drinks with food (not even while drinking), just water. Today, we were already in the car to head home, I tasted my kidlet’s drink, turned off the car and went in and got one. It was delicious!

I am a FREAK about ginger! I don’t like pickled ginger, though. I lived in Japan for four years and never acquired a taste for it. My older daughter eats it out of the jar. My younger hates ginger all together.
I have made Ginger Syrup, which I add to teas, and soda water. I found a couple recipes to try for both the Ginger Lemonade and another West African drink that has cloves and cinnamon added to the lemonade. That just has to be amazing.
