I’m doing keto right now so use ground up pork rinds but the rest of the recipe is still the same. The risk of a massive heartattack is totally worth it!

Nice! Thank you! And the gouda sauce please?

For a good amount of sauce (2+ portions) do
1 cup heavy cream
2 Oz cream cheese
1-2 cups shredded cheese to taste

Just heat the cream and cream cheese until the cream cheese is incorporated. Then mix the cheese on until melted in. I’ve used pepper jack, gouda, and cheddar and they all work well. Enjoy!

Back to R and D Kitchen.
Smoked trout spread.

And the way they pan sear, and make their salmon so crispy on the outside and delicate on the inside, is just amazing. :yum:

Fortunate to be able to work from home today. Couldn’t find camp for the little guy. Send help
Brunch for me as I’m not a breakfast person during the week

Favorite breakfast: Avo toast on sprouted multigrain with a smear of soft cheese, turkey, garden tomato and a dash of salsa verde. I made the salsa yesterday with ingredients I brought down from home including homegrown serrano chiles.

Seared Cod filled with mango salsa. I am not much of a fish eater, but it was pretty good.

It’s my version of Dutch Stamppot again; I love it. Potato, cooked kale, olive oil, salt, pepper. Sorry, bacon lovers, that’s red potato peel.
Bacon or the traditional sausage would be a good addition for those who want it. Bon appetit!

Mango salsa on salmon is the absolute best. I haven’t had that for awhile. Use to love that in my favorite Mexican restaurant in Austin.
