Today’s big experiment: dehydrating my pasilla hybrid chiles in the oven. Low heat, long time, alternating door open and closed for moisture purposes. This will be interesting. They already smell like a grassy, lime spice, hard to explain. Wish me luck!

Made a loaf today. Pretty much forgot how to do it since it’s been awhile.

After maybe 10 hours, the pasillas are dry and brittle and perfect. Guess I have to try my hand at making Mole (pronounced Moe-lay, emphasis on first syllable) after all!

So, foodie friends, this is crunch time. We leave on Friday for 9 or 10 days and I need to clean out my fridge. So I’ll be asking for ideas based on some ingredients.
Today: what can I do with Brie, chives, rotisserie chicken or turkey/ham lunch meat, multigrain sandwich bread, red bell pepper, sauerkraut, lettuce, apples hmmmm regular pantry items and other things I can’t recall that are in my fridge…

I wondered what you planned to do with those?! Homemade mole sounds amazing! I’ve not made it myself, I know virtually nothing about Mexican food tbh. Not much good Mexican food here in the UK. I’d like to see how you make it
I made a cauliflower curry earlier. I wanted to get some Paneer to put in it but couldn’t find any unforts.
Classic Swedish sandwich, Swedish meatballs and beetroot salad (basically it’s chopped beetroots and mayonnaise, for Christmas we put cream and anchovies in it instead and call it anchovies salad)
I’ve never heard of that food combo before, but you’ll bet I’m going to try it now. With Vegan blue cheese, because I can’t find vegan brie.
I wish I could bake bread. Only bread I actually get right is cornbread and banana bread. Please tell me your secrets.
I’ve never made mole either, it’s not something my mom grew up making, and I’m a bit intimidated but have found tons of recipes. On the other hand, dried pasillas are used in lots of Mexican cooking. I’ve used them in making Pozole, so I at least have some experience with working with the dried version (thank goodness!). Of course, they could also be ground and used as a spice that way, too.
P.S. I really am excited to make my first curry! Might not be for a few weeks though.
