Sauteed mushrooms and poblano, with butternut squash, black and red kidney beans, paprika, fresh oregano
Yum on all the food! @RosaCanDo how do you make your avocado salsa? The tacos rock! Glad you had a nice time.
@Runningfree the arugula looks great, have a good week,. Lots of nice cakes, @beardson nice work on checking out the cakes! @HoofHearted , yes, thumbs up!
Thanks Alisa! It’s the one job I’m very good at. Your dinner/lunch looks delicious, I think it’s inspired my tea for tonight
This is the original recipe. Nigel Slater. I free hand my version and I see I have forgotten about the ginger. I make it quite a bit. Can add lentils. Or not have any beans. I put vegetable broth in it. Happy Tea! I thought scones were with tea! @beardson
PS I microwave the whole butternut. Quick and I don’t have to wrestle with cutting it. I stab it Several times with a knife to vent it.
Thanks for the awesome butternut squash hacks, I always dread the cutting bit. I mean dread is a bit dramatic but I don’t really like it. And also for the recipe. You are right, tea goes with scones (love a scone). I’ve worked in so many areas in the UK that my work for evening meal changes all the time. I reckon Nigel Slater would call it supper but that’s just a guess.
Green tomato experiment #1: Crostini with goat cheese, vertically sliced red onion, green Cherokee heirloom tomato slices (thin), a dash of salt and chopped dill and basil. Mmm fricken mmmmmm! Super tasty, crisp texture and slight tartness but minimal (maybe no) acidity in the tomato. I can’t believe I haven’t tried this before.
Alisa, the avocado “salsa” is just mashed avocado mixed with homemade salsa verde, or occasionally jarred salsa. Like a runnier guacamole, maybe? If the avocado is subpar when I cut it open, I like to do this. Unfortunately, that happens far too often where I live.
My first Falafel.
Crispy chick pea fritter, lettuce, tomato, feta cheese, house tzatziki, pita with a Greek salad.
It was pretty good. I love to eat vegetarian, especially with my daughter.
Chef salads a la Rosa, aka big ass salad night is back! So much goodness on one plate.
And I enjoy the challenge of finding the perfect bite!
I love a good falafel. The first one I ever had was at Falafel’s drive-in in San Jose CA. That was forever ago.
Oh I love fried rice.
I still haven’t made it at home.
I remember that stuff you posted. But I don’t remember what it was Just never got around it.
And I’m a big fan of the chopped salad too.
@RosaCanDo
Games on,
Meatloaf’s in the oven.
I guess it was a hybrid salad. Maybe I should stick to calling it salad a la Rosa. Meatloaf is calling my name…soon
I love meatloaf. Even when my kids ate meat, they never really liked meatloaf. WTH is up with that? I make a damn fine meatloaf, too.
There WILL be ketchup!!!
It’s not a butter @Its_me_Stella
Or a pepper @RosaCanDo
Competition But it does taste great
This is my favorite thing to do with these salads… I love them. Looks yum!
@Dazercat
Someone can not believe their eyes at the unsightly amount of butter on your potatoes!
I gave up sugar.
I reckon I’m making up for it here.
It’s organic.
Must be good for ya right?
Right?
So colourful, I love it!!
I found a bag of peas and carrots im the freezer, left over from cottage pie days. Breakfast of champions. Peas an carrots remind me of my childhood.
Butter and pepper, so I can fit in with the cool kids.
Make mint ice cubes for tea.
Make lamb mint sauce.
Thai beef salad (my favorite dish in all the land!)
Dry it, bag it, send it to me.
Or dry it bag it and make hot tea.
Drink it in all your water. It’s so good for digestion.
Just chew it.
