This is pretty close to the one my Filipina friend makes for me. She adds a ton of thai chilis - so work with your palate. She likes to fry my face off. I prefer sliced tomatoes to cherry. I could eat this every day. I eat the leftovers, even when they’re soggy. The flavors are on point!

More crostini, this time with an herbed smoked whitefish spread, red onion, green tomato, dill, flaked sea salt, a little pepper and a slight squeeze of lemon. Mmm hmm.

English Muffins. I’ve done different recipes, but these are the ones I gravitate toward because they’re soft inside. Not dense like they’re supposed to be.

I’m getting dejavú. I feel like we have had this or a similar conversation before…I’m also looking for good Thai dishes to use the lemongrass I’m about to harvest. So much! I just saw that I can freeze the hearts.

I haven’t had a chili cheese dog in a long time. I ate too much. For canned vegetarian chili, it was pretty good.

I made homemade pasta sauce and chopped up the leftover grilled veg from taco/fajita night, it turned out scrumptious. I just love the bright flavor of fresh tomato sauce. Served with grilled chicken thighs and drumsticks and some crusty Asiago bread. We were famished so I didn’t get a pic of the plate!

Cottage cheese with the last of this unripe melon and the saving grace, perfect strawberries. I like pepper on my cantaloupe (gasp! What a surprise!) and some basil was a nice touch, too.

Carrot cake is my favorite. Haha oh it will be made with sugar. I don’t really have a sweet tooth so when I do - I use the real thing :wink:

You’re making me hungry! The downside of living in a smaller rural community is the lack of food choices beyond typical middle American fare. I think we need to take a driving trip to Madison, WI, or somewhere else nearby just for a foodie excursion! Chicago is a 3-4 hour drive but I wouldn’t know where to start!
