Wifey’s Velveeta Mac & Cheese.
And I pan seared a piece of frozen salmon. I just read you can pan sear your salmon without defrosting it. Came out pretty good. Except cooks error. Over cooked it a bit. I added some Cajun seasoning after I flipped it. And a little garden salad.

I’m personally not a big fan of the Velveeta but if wifey’s cooking I love it !! Prefer cheddar myself.

Same. Sharp cheddar and then in the broiler to make it dark on top

Part 1 of birthday weekend cooking fiesta! Egg roll in a bowl for Friday lunch. In my case I’m thinking of using romaine leaves to roll this up in and eat.
Edit: I forgot to mention this is the first time I’ve cooked with the local farm’s ground pork and it is absolutely beautiful.

Might have bit off a bit more than I can chew today, but it’s all good. Chunky veggie pasta sauce made with marinara from the freezer using home grown tomatoes and about 60 spinach Parmesan beef and pork meatballs. Going to freeze a bunch for later. Break time then pasta and dinner. Uf!
