All about wraps lately. The last of the fried chicken (skins removed), avocado, radish, baby greens and almost the last of the spicy cilantro slaw. Delicioso!

I had accumulated a bunch of chicken bones and parts, so I made chicken stock this morning, and now weā€™ve got some seriously flavorful chicken soup with potatoes for the starch instead of noodles or rice. I had a bunch of baby potatoes that were growing in my pantry so I used them in this. A half lemon squeezed in, too. Not much to look at, but just in time for the weather outside.

Baked potato night. Mine has some chili, chives, broccoli and queso fresco. Hubby got the works, sigh. Lucky.

Youā€™re both wrong. Itā€™s cottage pie. And you can put greenbeans and velveeta cheese in cottage pie, itā€™d still be cottage pie

Tex Mex Migas.


I canā€™t find these anywhere since I left Austin. I probably make them better anyway. :crazy_face:

SautƩ green bells, Onion, Tomatoes and jalapeƱos.
Once theyā€™re softened add crunched up tortilla chips. Not too crunched up. Add your beaten eggs.
Top with shredded cheddar. And a spicy habanero salsa (missing from pic.)
Served with tortillas on the side.
Usually served with refried beans or better yet black beans. But I couldnā€™t be bothered.
