It wasn’t too bad… I didn’t follow any type of recipe (and I’ve only had a fish taco once some time ago), and just kinda added things I had on hand, so I might get a slap from someone who is a fish taco pro with my weird random ingredients & flavours

Baked fusilli with sausage and veggie pasta sauce, Italian blend cheeses stirred in and on top. Per husband’s request, which made it pretty funny when he asked me earlier what was for dinner tonight.

Made meatloaf with roasted fingerling potatoes and asparagus. The only thing missing was the salad, but I promise I ate my salad!
I have never made a meatloaf but one day I would love to try. Seems like there are a lot of different recipes/ingredients. Yours looks awesome!
Why thank you! It’s pretty easy to make, just throw everything together and bake for a while. Unfortunately, no leftovers this time, so no meatloaf sandwiches tomorrow.

My wife would kill me if there were olives anywhere near it. Especially green.
Ya the cold meatloaf on sourdough with too much Mayo is the best part. IMO.
Yes, my comfort food. I never ate potatoes too much until I started doing this and I love it. As many of you know, my version of Dutch Stamppot. I have switched from kale to spinach bc the baby kale had been kind of yuck. I bake the potato in the microwave. I rinse and then microwave say three cups of fresh spinach or kale for one minute.
While the spinach or kale is cooking, I split the potato, pour olive oil on it, black pepper, and some French sea salt. Then put the cooked green on it, cutting it a little with a knife and mixing it up some.
You could add sausage if you were inclined. And use butter!!
