It was a toss up. Veal Picatta or Parmigiana.
I haven’t had Parmigiana for so long.
The filet last night was thin and a bit dry but I always do more than one (leftovers) and the one I saved for today was a bit thicker and it was more juicy. I probably put them in too long but I’m always scared of uncooked meat
Salmon is best on the rare side and it is almost 100% not going to cause any problems being “undercooked,” unlike other meats. I mean, I eat raw salmon and other fishies frequently, soooo…plus, dry and overcooked salmon is sacrilege!
Chicken being underdone is my biggest fear.
I should add that I’d eat salmon cooked any way at all because it’s freaking delicious! And so good for you, too.
Don’t come for me
I’ve seen the non cooked salmon at the sushi place and I don’t trust it enough to try it!! I got sick from chicken one time and it was the worst time of my life!

P.S. the thin part of a salmon filet is ALWAYS drier on mine, too, no matter how I cook it, unless I cut the pieces and cook them separately. Which I never do.

I was a little apprehensive because the burger patties haven’t been up to standard this trip. Probably supply chain issues
But they nailed it for me today
Breakfast for dinner tonight. With mushrooms, onion, green bell pepper, pork breakfast sausage and some melty Mexican cheese.
I want that!!!
It’s surprisingly really really good.
I wouldn’t want to get it too often though.
But it works.
It reminds me of an Elvis sandwich; peanut butter, bacon & banana (& honey for me). Same that you wouldn’t want to eat it all of the time but cool that it was ever created.
