So i boiled the beets for a while in water and apple cider vinegar with a couple bay leaves and garlic cloves then peeled and roasted them in the oven for a bit. I love them! I am going to make a salad with the leftovers.

I know I post leftovers so often but I love having options at the end of the week. We’ve never been much for special Sunday dinners. Lots of lovely grilled and roasted stuff going on here and mushroom gravy on top!

I need to try tacos like this. I’m so on the fence. But I have had them at restaurants, pork with fruit salsa like the tropical regions of Mexico, but I just haven’t tried it yet.

It’s pretty simple, just 2 mashed bananas mixed with 2 eggs and 3 tablespoons of flour (I use glutenfree), some baking powder and vinegar and some spices.

Lemon sugar is me being grammatically lazy.
Lemon (fresh squeezed) and a sprinkle of sugar on your pancake. Or, y’know… a big old spoon of dark chocolate mousse… And choc bits.
