I thought I’d go with appetizers tonight.

How did your pannacotta turn out?

It was delightful! Now…for regular sugar and dairy eaters of pannacotta…I’m not sure they’d be convinced, BUT…for me who doesn’t eat those things: the coconut milk with its fat content creates a pretty melt in your mouth experience, the berries, vanilla and honey created great flavor and nice sweetness (a lot less sweet than your average dessert) and the gelatin held everything together nicely, though my husband said that knowing it was gelatin in there weirded him out :woman_shrugging:t2: To me it was a delightful dessert option!

Omg… that looks so delicious. I’m currently in a state of forced vegetarianism and I have such bad meat cravings. :laughing: ill just drool over your pictures and try not to eat my phone.

Thanks! It was really good. I decided to freeze the rest of my strawberries/grapes so I have a couple more smoothies I can make.:cup_with_straw:

@ELY83 :sob: Yes basically “forced” by circumstance, I could say. Short story is GI issues. Avoiding any foods that cause me distress and consuming “green smoothies” :nauseated_face: I eat a bit of cheese and I had a little heavy cream with a peach yesterday. I always used to say that no one could pay me enough to be vegetarian, let alone vegan, but I never considered that I might have a “I don’t want to suffer anymore” line. :laughing:

@Salty OMG wild black raspberries and fresh local strawberries! That looks amazing. Local/fresh berries are just so much more flavorful than anything in a standard grocery store.

And thank you for reminding me, I went ahead and made another smoothie with the :strawberry: :grapes: I froze yesterday. Now I want to go to the store to buy in season fruit and freeze more. :blush:

Ahh ok that makes sense. Honestly for me…I tend to thrive on a fairly limited menu that is grain free, dairy free and intermitent fasting. Growing up a “live to eat” person, it can be challenging for me to recognize that if a food is not serving me well, it benefits me to cut it out. It’s a learning process though right? I’ve been having a really delicious smoothie lately:

1/2 frozen banana
1/4-1/2 avocado
2-3 handfuls spinach
1-1.25cups cold plant based milk (I’ve been using coconut. unsweetened From a bottle, not from a can)
2 scoops collagen peptide
Tiny Splash vanilla
Dash of cinnamon

The banana and avocado keep it creamy, just sweet enough to feel like a treat and filling enough to be a meal. It’s not quite as healthy as the one you posted the other day (I actually like the more no bullshit smoothies like that TOO, but this one has been a really nice make me feel good smoothie lately!)

Excellent! Thank you! I will keep the recipe and give it a try. I have honestly never been much of a “smoothie” type of person, so this is a new road for me.

I grew up a “live to eat” person as well. I’ve tried all kinds of different ways to eat, done copious amounts of research as I went along, and some really served me well at the times I needed them. I was once a strict keto person (before it was cool) and I really felt good on it. I wish my body would make up it’s mind. :laughing: Glad to hear grain/dairy free and IF has been awesome for you. It’s definitely all a process.

I miss cooking and baking though, and having things to post in this thread. :frowning:

Edit: I found that adding a little bit of green apple to the no bullshit smoothie I posted previously gave it a little tang that was pretty nice. Would definitely recommend.

Paleo baking books that are pretty awesome! I mean…paleo baking is still super calorie dense and meant to be eaten with moderation (still not sure what that means :joy:) but “BAKERITA” “Sweet Paleo” and “my Paleo Patisserie” are all pretty stellar

My octogenarian neighbor gifted me some rhubarb from his sister-in-law and I want to bake them something. His wife has developed dementia since we have lived here and he’s told me of his struggles being “left behind,” his words, and getting her to eat anything beyond a chocolate milkshake. She loves rhubarb, apparently. Anyway, if anyone has a lovely baked goods recipe for rhubarb or strawberry rhubarb something, I’d appreciate some ideas. I made strawberry rhubarb muffins one year and they were quite good but other than a crumble that might require some prep on his part I’m kind of lost. I’ll be googling also.
