In the UK we make crumble, which might be similar to your cobbler? Oats and nuts and cinnamon topping on the sweetened stewed fruit?
What about a kind of fool? The fruit mixed with plain yoghurt with a biscuit to dip in like shortbread?
Or a alternative Victoria sponge cake with rhubarb and filling between the layers with the cream?
20 years ago I had a friend from Canada, actually a sister of a friend, Many times she flew down here with a lot of fresh homemade rhubarb pies, they were wonderful. She may have had a lattice top on the top of them.
She would bring three, carry on. Anything you do will be wonderful and appreciated.

My younger 2 also love eating them frozen lol. I used to give them frozen peas to munch on when in the highchair and teething and they still love them frozen at 4 and 10
