Deep fried with yoghurt mint sauce and salad
Oh wow this looks amazing, the sauces and the fried aubergine is making me so hungry this is lovely summer food.

Decided to get creative tonight. Roasted some heirloom tomatoes that don’t seem to be great for eating raw (the purple yellow ones), plus one of the black tomatoes (so delicious, from now on they will be eaten as slicing tomatoes raw) along with some zucchini. Cooked a couple chicken breasts on a sauté pan with olive oil, then sliced them up. Cooked my pasta just before al dente. Made a sauce with the chicken drippings along with butter, garlic, lemon zest, added flour to thicken then lemon juice and chicken broth. Added my pasta and simmered for a bit. Added the roasted veggies and simmered and stirred so the tomatoes sort of melted into it. Added feta cheese and it melted in also. Some basil, the chicken and simmer for a bit. Oh and red pepper flakes. Served with more basil and feta. It doesn’t look beautiful but goodness me it was delicious. I wish I hadn’t torn all the basil too early for it to blacken but I was hungry and in a hurry.
Bright flavor, complexity with the tomato and feta and basil. I’m beyond pleased. And I got to use my new dinner plates/bowls.
Thanks for the recipe @Mno this was absolutely delicious! I normally avoid frying anything in this kind of capacity but this was so worth the extra effort. Self care meal at its finest

Cod nugget po’boys…basic coleslaw on top, pesto aioli…and fresh lemon…first one eaten in seconds…second one…barely lasted long enough for a picture
I’m happy my kiddo will eat this pasta made from just chickpeas & lentils. He’s picky but does love pasta. And this has lots of great fibre, protein & nutrients. Added a bit of Alfredo type sauce
Along with smaller portions of last night’s dinner, I made some pretty salads featuring three different kinds of garden tomatoes. Cherry, Roma, and I think a Ukrainian tomato. In solidarity!
