Breakfast is turkey on an English muffin with light herbed cheese spread, baby spinach and tomato.
Last night’s pan charred brussel sprouts, baby red potatoes, and field roast apple sage sausages. Seasoned with cajun spice mix, more sage & hot hungarian paprika.
This morning’s oats with plain unsweetened vega protein & greens mix, chia seeds, lots of cinnamon, chopped dates, walnuts, coconut cream, and a drizzle of maple syrup.
Tried this Carbonaut low carb bread toasted with my eggs for my supper tonight. Not bad. It’s got 7g protein and 7g fibre per slice.

I was head chef tonight and it just never looks as good as when my husband cooks

My husbands cooking style: Whatever lavish meal he is craving he will go to the grocery store and buy exactly what he needs
My cooking style: Whatever we have in the house will do and if something is missing from the recipe i will adjust or replace cause i am not leaving the house

Cheesy meatball casserole.
I used 93% lean grass fed beef. Whole wheat pasta. Which was good. I’ve never cooked with it before. And mozzarella a low-fat cheese.
It was as a little dry. Needed more marinara.
I couldn’t find fresh oranges so i bought sliced mandarin oranges in 100% juice. It was as close to no added sugar as i could find on the shelf.
I still think it will be a delicious dessert so I’ll go for it anyway.
Do you usually serve it warm or cooked, then chilled?
Serve it either way you wish! With 10 people or more at your table it might be easiest to serve it cold. I hope you will enjoy.

The courage to make a warm meal
Forgot that I intended to get up and go to the store early today to beat holiday crowds and that I was out of my normal breakfast foods. Scrounged this together.
A good use of the vegan chorizo I picked up in Minneapolis. Sautéed with red bell pepper, served with feta, chopped tomatoes, fried eggs, green onion, and cholula on yellow corn tortillas.
Chorizo is a weird comfort nostalgia type food for me. My mum disowned my abuelo and the dominican side of our family when I was pretty young. Chorizo and platanos were about the only semi cultural foods she would make after that. She’s not a very good cook though so it’s probably for the best.
Mini spring rolls and salad. I don’t usually buy those bagged salads as I find an odd taste, but they’re convenient in a pinch
