Mondays are clean the fridge out day, so I made a creamy soup using all leftovers - the last of the sausage gravy with shredded rotisserie chicken, chicken broth, steamed broccoli, crimini mushrooms, basmati rice and even a sprinkling of caramelized onion. Tasty!
Resourceful rosa
Multigrain muffin, one half with lox and herbed cheese spread, the other with a lovely looking avocado half and hard cooked egg. Grapes and a chunk of feta.

Three bean vegan chili with street corn and some kind of vegan crema. Not bad. Not a big fan of quinoa but it was ok like this.
I still had some spinach so I used that as a base.
The company is called Factor. They’re a meal prep thing. Never frozen, chef prepared etc. this one had zero cholesterol.

A sort of a cauliflower fried rice dish with ground turkey, lots of ginger and garlic, and fresh veggies (except for frozen peas) - shredded cabbage, red onion, carrot, red bell pepper and celery. Soy sauce, a tad bit of fish sauce, lime juice and not pictured is sriracha.
Edit: I forgot to mention the eggs!
Frozen blueberries and fresh cranberries I froze, microwaved for two minutes! Sooo good.
Got five bags of cranberries to freeze today.
Zucchini tomatoes, poblano, red pepper, carrots.
@RosaCanDo how do you boil your eggs? They’re always perfect and beautiful ( like the rest of your food). I put mine in cold water. Bring to a boil. Turn off. Let sit 12 min.

@Matt yum! I’ve made a lot of borscht in the past not lately. I need to. I used cauliflower instead of cabbage just because. And no meat.

Breakfast
@Alisa I steam my eggs: boil water then shut off heat, place eggs in steamer basket in pot and cover with lid, then bring back to a fast simmer. 8 min makes perfect jammy eggs, 12 makes hard cooked. Of course I put them in ice water after that time to stop cooking. They peel so much easier, too!
No cooking here tonight.

Another day, another breakfast sandwich. After the holiday, my morning meal is going to look different…!
Some food since the weekend that I never got around to posting.
A few from my family holiday party: I made bread. My aunt made quinoa salad with walnuts, dried cranberries, squash, onions, parmesan, and balsamic. My also did coconut mango rice served with my dads cajun lime shrimp. Not pictured is the massive brisket my father also spent all day making and beet sage ratatouille type thing.
Monday breakfast finished cooking just in time before power went out. Put it on an old SpongeBob tray to eat in front of the fire. Mushroom, red pepper, & feta frittata.
Tofu scramble turned breakfast salad today. Mixed in some leftover beets from the weekend holiday meal.
