Made Chipotle Chicken Stew for an army! Fresh made chicken broth with the breasts and thighs I used for the soup), used my first home canned garden tomatoes (yay!), some pureéd tomato also, lots of onion, garlic, cumin, and chipotles and their adobo sauce, red potatoes, carrots and celery. Only thing missing is cilantro because we got hit by the storm earlier than expected and I couldn’t run to the store this morning. I can top with it later on. One perk of the snow and subzero temps is the best cooling mechanism for this giant pot! Tasty and warming stew.

Whoops! I forgot to say didn’t I?! It’s a pull apart spinach dip breadstick Christmas tree! I had to a test run because…while I love making delicious food…I am not a “presentation” gal. I like the rustic look. Things can look appetizing, but they are rarely neat or in the shape of something. I figured if I made this blind it could turn out as a real big Pinterest FAIL…but in the end…I think it turned out ok!
It’s a great concept and it turned out beautifully. I am like you and like the rustic look just fine. I’m tempted to try but I’ve got enough on my plate so I’ll stick to the regular spinach dip this time. Great idea, though!

Kale, sweet potatoes, with fresh frozen cranberries microwaved a few minutes, walnuts, avocados, eggs and egg white.

@RosaCanDo you just steam and never immerse the eggs? I have a big double steamer I’ve had forever I could do that in. Soup looks nourishing for a cold night. Your first canned tomatoes, yay!

Thanks Alisa! That’s wild too considering I was at my dad’s and was missing some key stuff (pizza cutter, jelly roll pan, rolling pin ). So first off…I didn’t make the dough and just bought the store bought stuff. That really worked bc even though it comes in a tube, it’s pre rolled out, so not having a rolling in, it was still doable. I have seen lots of versions of this…some with puff pastry and others with pizza dough. If you’re not a baker extraordinaire I recommend the pizza dough. I think it’s a lot more forgiving!!!
Denver omelet style egg scramble this morning with onion, bell pepper, mushroom and ham. I can’t get enough mushrooms lately and I didn’t put enough in this.
Dad wanted to go out for omelettes this morning but it’s -32°F outside, his car wouldn’t start, and he didn’t like the idea of walking the mile to town.
So I made scrambled eggs with spinach, garlic, roasted red pepper, mushrooms, feta and a side of roasted potatoes with onions. Half ezekiel muffin for me and a wheat bagel for him.
We’re in the midst of a blizzard here. Cozy at home but no trip to grocery store before the Christmas weekend as I’d planned. Lots of road closure currently. I had a little smoked ham and some other staples on hand. Lundberg wild rice blend for kiddo & me; I did air fryer baked russet potatoes for hubby
My boss bought the crew lunch today Rice, beans, carnitas and a Al pastor taco. I’m really grateful to have a cool boss and a great crew to work with.

A joint effort with my fella for some meatball sandwiches. Just store bought meatballs, spicy “Sicilian” with red pepper flakes. Yellow mustard for me tonight because it just sounds good for some reason. Fresh grated Parmesan on top.
