I love making black bean soup in the crock pot because the beans get so tender and it’s hands off. It’s also super healthy and you can put toppings on galore.

Just do the same with chicken. Throw the chicken breasts and a jar of salsa in the crock pot and shred. When my kiddos still ate meat, that was their favorite for tacos and nachos.

Best Brussels Sprouts Evah!!
@Alisa they were sautéed perfectly with cranberries, candied jalapeño bacon and Parmesan. You can’t actually see the cranberries but they were delicious. The red you see is the candied bacon. Anyway. Thought of you and all those cranberries you been eating. Or cooking with. This was an excellent combination :yum:

And for my main I got the
Butternut Squash Curry {gf, v}
Red curry & coconut milk, cauliflower, & coconut rice
It was also very good.

Looks like ‘Bratkartoffeln’ to me. :see_no_evil: We have potato salad which is usually cold and Bratkartoffeln which is warm. They are fried in a pan. Ah, I loved how my grandmother made them. :upside_down_face:

We call them Quarkkeulchen, kinda like pancakes but with a lot of curd.

Here the recipe for everyone who wants to try this:

350 g curd or Skyr (I used 250 g curd and 100 g Skyr)
1 pinch of salt
5 tbsp flour
3 tbsp milk
1 teaspoon Baking powder
2 eggs
2 tbsp Xylitol

Mix until it’s creamy, bake, enjoy :heart:

We have this “thing” here in Germany with potato salad and I love it :joy:
There are basically 2 groups that love to “fight” with each other about the ingredients :joy::smiling_face_with_tear:
Similar to the “cake or pie” thing.

I made myself a breakfast burrito! Usually my fella makes them but his are heavy and extra dense. Still delicious, but I needed something lighter. Soft scrambled eggs, a little diced leftover boiled potato, avocado, green onion and some shredded colby jack. Topped with Cholula green hot sauce. Very tasty!

One sheet pan roasted pork loin seasoned with S&P, garlic powder and smoked paprika and cauliflower, red potatoes, grape tomatoes and chickpeas seasoned with curry spices. Squeeze of lime finishes it off and BAM :boom: Delish. I need to do versions of this meal on the regular, so easy.
