@RosaCanDo These two are pantry staples in my home, I usually have two or three jars of each. They also come in medium. You may or may not be familiar with them. They are delicious.
Edit. I know you make your own salsa too.
The rhubarb and ginger jam turned out perfect! I initially thought the bits of ginger were a bit annoying and that I’d juice or purée it next time, but once it’s on bread you don’t notice the texture at all.
I vote for ratatouille next. That dish, with a good crusty bread is my kids’ favorite AND I have never met a meat eater that doesn’t enjoy it. It is pretty, fulfilling, healthy and delicious! Do it! Post pics.
Mirepoix for soup. Carrots, celery, red onion… , lots of garlic, potatoes, broccoli, quinoa, fresh thyme and fresh oregano. Soup was really good but the pic is pretty pathetic so adding what soup coulda looked like.Add more green!

Dinner last night. It turned out too spicy for hubby but was delicious…healthy chicken pasta: chicken, whole wheat pasta, brocolli, spinich, basil, with a homemade sauce
I’m the ONLY customer here. Haha. I’m going to have a cuban sandwich. Haha actually probably only half of it. But if i have to go downtown to pay $700+ for tax I’m going to do something nice for myself

Catalina Taco Salad
Spinach, kale, cabbage, and carrot mix topped with Tex-Mex taco meat, pico de gallo, ranchero beans, jicama, tortilla strips, and avocado tossed in Chipotle dressing. Not a spec of arugula.
I attempted that method where you scrambled some eggs & pour in pan until almost set. Add tortillas (this is a small keto/low carb wrap that fit perfectly in my smallest pan). Cook a minute or so until set, then flip; added cheese and leftover bacon, then fold in half.
I ordered my first hot sauces (mostly milder ones ) so maybe that will be a good addition!
