Red Onion, tomatoes and cucumbers before mixing up as a salad
Eggs, spinach and tomatoes and cucumbers
Egg whites and cooked kale
All the food looks great!

Vegetarian Enchilada Casserole

So many veggies,
Onion, poblano, garlic, yellow squash, zucchini, fresh corn, pico, black beans, pinto beans, avocado, green onion, and pepper Jack cheese. Light sour cream.
