Went with red grapes in the spinach salad. And Point Reyes blue cheese.
The grapes worked very well. I think I like the Stilton blue better as it crumblier.
And the reason I’m eating all these spinach salads is because wifey bought this HUGE tub of spinach. I’m never going to get through it.

I love a good dark roux gumbo. This one was pretty good. Not as good as Manny’s Gumbo at Central Market @Alisa definitely happy I bought and and I can buy it again.
I never got the hang of making a good dark roux for a gumbo. And besides I’m the only one who likes it.

Home grown basil with walnuts
to make Pesto, served with smoked salmon and a mango/ bean salsa/salad

Mexican restaurant. Mostly vegetarian that I am, I got chicken breast and guacamole.

Saturday breakfast. I made multigrain protein waffles with local maple syrup in the waffle maker for kiddo. A big messy plate of three eggs, mushrooms & cheese for me. It’s tastier than it looks :laughing:

I made Fritata regulary a few years ago…
It’s a real good dish, that also tastes cold.

This one was:

2 small zuchhini
1 middle sized butternut
… chopped in cubes
2 onions
2 cloves of garlic
1 chili
… minced
2 tbsp dried herbs from summer
Salt

, >> roasted in 1 tbsp of olive oil for 5 minutes

Put in a baking dish (thinly buttered)
4 eggs, pinch of salt, mixed
150 g Parmesan

Put Parmesan and egg over it.
Bake for 30 minutes at 180 degree.

I remember sweet potatoe and peppers or Feta cheese were also a good choice.
