Is anyone else here a meal prep person? Looking for dishes that hold up for about 3-4days.
I’m running a large family and got teenagers everywhere, so I need to stick to a tight budget. I’m stuck for ideas and they’re getting sick of potato salad and fried rice as a side filler.
I need to get 10 serves per day from whatever I prep

I do freezer meal preps. I’m not feeding as many as you, that’s quite a crew! I take a whole day and make 10-20 meals. I make a lot of casserole’s, lasagne, and crockpot meals. It has really saved by butt, and helped with the grocery budget also. I don’t make side dishes that way, usually just try to have fruit/ veg that they can choose from. I got some good ideas from Acre Homestead on YouTube.

I used to do freezer meals but the kids won’t eat them. Dinner is always fresh cooked.
I class a side dish as something they can instantly grab after school that’s healthy instead of them eating school snacks.
I’m trying a Asian noodle salad with them this week, so I’m really just looking for other things to add to the rotation.
I’ll have a look at the YouTube channel and see if something comes up.

Wow you are cooking for a whole team.
First of all, all my respect!

I am a meal prep person, if I am working. Not sure if these things work for you, but here are some of my favorites.

Breakfast / lunch to go:

  • Overnight oats in jars, topped with some frozen fruits
  • Banana bread (all time classic)
  • Zucchini cake (salty with Feta)
  • (vegan) Joghurt with frozen fruits
  • veggies and crackers with dip (like humos)
  • boiled eggs
  • salad jars
  • protein / energy balls and bars

Dinner / warm dish

  • soups - soups - soups
  • rice, veggie, chicken / tofu
  • frozen veggies to cook a fresh meal in short time… I am just putting boiled water over it for 2 minutes and then you can already stir-fry
  • noodle things maybe

The book I’m reading at the moment suggests to aim for at least 30 different plant ingredients in any given week. Plus as many fermented foods as you can.
