I had the energy to cook today and enjoyed it very much!

Breakfast was eggs with all

Dinner is potatoes, green asparagus, white cheese topped with garlic/ginger/chilli marinated in lemon juice

What dough do you use? Mine are always shitty, inspite using different recipes.:face_with_raised_eyebrow:

400g strong white bread flour
1 tsp salt
1 tbsp sugar
1 tsp dried yeast
300ml warm water

Mix all together, place in a bowl with a damp cloth over it in a warm place for an hour or so, then kneed it and shape it.

My kiddo sautéed mushrooms all by himself (well, I cut them but he did the cooking). Last week he helped me stir. He was so proud. And he ate them! And his whole plate plus more tomato & mushy, minus half a burger. Big step for him, as he’s pretty picky, especially with veggies. Nice to get variety in him instead of just pasta :laughing:

Hey! @Dazercat …I didn’t want to derail the gratitude thread, but I am a Ted Lasso fan too! it seemed more appropriate here To ask: Have you ever made shortbread like the one Ted always makes for his boss on the show?!

JUST yesterday I was considering making some shortbread for the NICU staff at some point this week. I figured id ask if you’ve done it :blue_heart:

Today is ANZAC Day here in Australia. One tradition is to bake Anzac biscuits - it is said that wives and women’s groups baked and sent these abroad to soldiers during WW1. Absolutely delicious, the kids and I bake them every year.

"They shall grow not old, as we that are left grow old;
Age shall not weary them, nor the years condemn.
At the going down of the sun and in the morning
We will remember them.

No I haven’t. Been on the no sugar thing. But they sound delicious. I’ll have to check it out since I’ll be breaking my no sugar thing while in London. My friend is making me a crisp with custard. Can’t wait.
