Dish of the day: Seafood pot
I’m happy to have enough to freeze two portions. It’s delicious.
Desert is strawberries from the farmer’s market. They cost the hell of a money but once per season it’s ok.
Do I just take out a serving the night before and put it in the fridge to defrost? Is that enough time to defrost it?
I’ll give it a try and figure it out.
The bags I get are two servings. I take them out of the freezer pop them in the microwave for a minute.
If you get a larger bag then yes take out a portion that you would want the day before or when you need it and just microwave it. To thaw it out. I am never disappointed. Dealing with fresh mangoes I am disappointed sometimes. Even though I like how I peel them which is the take half the skin off and do one half at a time
Made a healthy spicy detox chicken soup…chicken, onion, 3 cans chilis, cabbage, brocolli, crushed tomatoes, and a sprinkle of kale. 10 outta 10. Good thing too because im going to be eating leftovers for days
Second time on this portion. It’s steamed chicken and veggies with rice. I may blend it, but won’t take a picture of what it looks like blended

When I went to the Farmers Market couple weeks ago. I got some wild line caught salmon, these were frozen chunks. Perfect to try some Blackened Salmon Tacos.
With a crunchy slaw and purple O. And I mixed up some yogurt, with everyone’s favorite cilantro, garlic, olive oil, and lime juice for a taco sauce.
Naked fresh corn. No butter but I did grind some black pepper on it.
Chicken salad with grapes. That’s the only way I can eat it after trying it once. Olive oil mayo so not as heavy.
A traditional Sunday breakfast here is a bran scone. Mine is toasted with butter only as I have no jam in the house (yet, I’m making jam later today)

Those babies are oat skyr buns. They turned out a little flat haha but I’m sure they’ll taste fantastic. And the smell guys
They do taste fantastic, veeery fluffy. I think I know what to not do next time to make them more round and not flat.

Asparagus season meets strawberry season. This is one of highlights of the year for me
Strawberry-asparagus salad marinated with balsamic vinegar.
Asparagus risotto with the perfect amount of Parmesan topped with strawberries.
When the prices raise further I make my own asparagus and strawberry fields.
I never tried mixing asparagus with strawberries I’ll give this a try!
I don’t think I’ve eaten this much fruit in my whole life. But I’m loving it
