I discovered using the side of a box grater works great for carrots. Except for my bloody fingers . Not julienned but thin and excellent for stir frying.
I don’t even know where mine is right now But thanks for the tip! I like using a regular peeler on them for dishes like this, too.
I tend to use a regular peeler, too - gotta protect those knuckles!
And I couldn’t find a peeler last night, either! Motivation to keep unpacking!
Found some plums that were pretty good.
Apple, cantaloupe, blueberries, strawberries and enjoying the vanilla sugar free yogurt more.
Gobbled this up a bit ago. Every summer, every year. I snapped beans with my grandmother, my mother, my sisters. When we had our tiny Midwestern farm, my husband and I planted, grew, picked or dug and then canned new potatoes and green beans and more.
Today I snapped alone in my memories, I sliced some gifted tomatoes and pressured cooked this batch.
It was a good day, sober annd alive in good food and proud of all I did when younger. I gained a green thumb and reminded how much the Earth gives back.
Next fresh, sugared Alabama peaches and home style vanilla ice cream. And movies in the chilled air, sober 8 days.
Not smashed on alcohol, no hangover tomorrow. Just a calm summer day.
Wish every day could feel this good.

This is a summer staple in our family as well! Thanks for posting. I have some green beans left to use and some red potatoes! I love this with pearl onions as well. Regular sliced onions work just as fine, too.

It was way more prep than I expected as are most stir fry dishes where I try to cram all the veggies in there. I need to focus on just a few, but I have too many leftover veg from my family visiting and need to use it.

I do the exact same thing with my stir fry’s. First it’s what the recipe calls for. Then add a couple of what I like. Then it might need color. And lordy don’t forget the bean sprouts

I’m such a creep…I’m always on this thread peeping everyone’s delicious food…but never posting my own. Probably because I have not been much for culinary delights lately. But here was my plant forward breakfast. Officially trying to crawl my way out of a long diversion into meat, grain and convenience heavy diet to my old ways of more “plant heavy paleo”. I still think keeping some occasional GF grains and beans in the mix is a good idea for longevity, economics and health…but…I’m an addict through and through and I tend to jump off the deep end when I allow myself certain foods. Cheers to getting back on the wagon!

Went for a bite while kiddo was at birthday party. Steak sammie with provolone , spinach, crispy onions and kettle chips for me (I was too cheap to pay the extra fee for salad lol). Hubby had chicken Thai chicken bites with loaded fries
