Carnitas, rice and beans bowls. Lots of cheese and tortilla chips for my husband, leftover steamed veggies in mine for a lighter approach.

I think I rather have meatloaf and mashed. But it was ok.
Pan fried eggs on sprouted grain toast & Swiss cheese, topped with a bit of wilted arugula. And a side of cambozola cheese
Everything about this makes me happy. Though, I have to have GF toast. Arugula is one of my favorite things. I haven’t had Combonzola - but I plan to rectify that within the next 24 hours!
Same here, @Salty! Looks lovely. Finding good arugula is hit or miss for me, but I’ll add it to my grocery list.
Cambozola was recommended to be by the wonderful @Eke. I was reluctant at first as it’s a blue cheese hybrid but it’s soooo good!
I don’t usually use much arugula but I buy it for bunny, so I’ve been trying to join him in eating it too

My little guy loves the bunny. He says it’s his brother lol. Bun is a bit suspicious of everyone besides me though. But I’m his snack lady

The way to any creature’s heart is snacks! Your little guy will hopefully learn to love greens someday. I made my version of your meal with leftover ham and baby spinach. It’s clean out the fridge week! Chucho got some ham chunks because he sat so well and didn’t breathe on me, haha!
This is so good that I want to give out the recipe. Which is super simple.
HOLY CHICKEN
500 g / 1 lb chicken fillets
500 g / 1 lb heavy sour cream, like creme fraiche, with 28 % fat
Salt and black pepper
1 small lime, rind and juice
Put half of your cream into an oven dish. Lay over chicken fillets. Season the chicken. Cover with rest of the cream.
Bake in 200C/390F for 30 minutes. Lower the heat to 175C/350F for another 30 minutes.
It is called holy bc it tastes devine and also you should not mix in anything else with the chicken! I know temptation is there but resist it! Do your veggies separately and do not try to go low fat!

I’ll have to run it by wifey. It is just because she is a very picky eater that’s why. It’s not like she’s the boss of me. (that’s my story and i’m sticking to it) It does seem pretty simple. Not sure if our merican sour cream is considered heavy or not. It’s pretty thick. And yes it does sound like you should be putting something else into it. But I WILL RESIST!!
