Foodies Unite #2

Thanks…it came out great.

Wifey made Lasagna for Christmas. A new tradition since it’s just us. Wifey makes the best meat lasagna in the world.

I made coconut macaroons for the first time.

With chocolate on the bottom.

Thanks! I had the end pieces which were more cooked than the rest. Was tasty with some Stonewall Kitchen horseradish cream sauce :yum:

I have cooked all kinds of cuts of meat, whole animals (edit: like turkeys) and chunks of animals, but the roast beef is an art! And I (I say this with deep gratitude, Mom) have flashbacks of the overcooked-ness of our Sunday roast beef dinners growing up - no amount of gravy could rehydrate it…
It was like a completely different meal than what you have on your plate! :joy:

I feel like I have leveled up in my cooking abilities. On my newly installed stove top, I just realised it has a timer on it! Perfect hard boiled eggs every time :joy:

Haha, my meat experience growing up had me off red meat (and most meat) for about 15-20 years. Either super rare, or if I asked for well done it would be overcooked dry (cheaper cuts) and minimal seasonings (sorry mum & dad). Dad used to pour the “juices” (pure red) from the roast platter onto his plate and I’d lose my appetite lol. I started earring red meat some in my 30s, nicer cuts, more tender etc as someone introduced me to it… and now, I’m particular where I get it from - usually our local grass-fed, regenerative organic farm nearby, which drives hubby crazy as he thinks it’s a “waste” and overpriced, as he grew up on a “regular” farm, but I point out he pays more for his beer and doesn’t get the cheap stuff,. (And I’m the one buying the food). I started well-done and have advanced a bit from there. Don’t eat it often though. I’m hoping to include more fish & plant based proteins in my diet in the new year and less meat but I’ll see how it goes :yum:

Me too.
I’d make it more but I don’t have an easy recipe. I know it should be simple to make. The Brits whip then up all the time.

Tonight’s dinner Roasted Garlic Flatbread with Zucchini and Tomato with a white sauce.

Like 2020 burnt on the edges :grimacing:

My 17YO got home from work and asked if I had plans for dinner. I told her we had grabbed take out for lunch so I wasn’t hungry. Her reply, “OK then. I am going to whip myself up a charcuterie.” :smirk:

We love grazing foods.

So easy to make. I follow this recipe and use Bisquik for the flour. I sprinkle in some finely chopped ham or bacon before I add the egg, and a bit of shredded cheese on top.
