I love summer…however the heat here kills me and my appetite.

Tonight we had a watermelon grapefruit salad with feta, pistachios, basil and balsamic glaze (salt and pepper to taste) I had grilled chicken skewers and my son had chilled shrimp and of course naan.

I love making pretty food. :drooling_face: Cooking was always a trigger for me to drink. It felt like the two went hand in hand… So I’ve been cooking a little less recently… Or at least less “involved” meals. I hope to get back to it soon though.

Jambalaya , caribian food

Ingredients 6 people

Soul food for 6 to 8 people

2 tbsp olive oil
4 single chicken breasts each in 3 pieces
350 gr. diced pork, shoulder or loin
2 onions, roughly chopped
3 green peppers in strips
2 garlic cloves finely chopped
1 tbsp. tomato paste
6 tomatoes skinned and roughly chopped, or a 400 gr can.
100 gr. piece of chorizo, in thick slices
1/2 tsp. cayenne pepper
1/2 tsp ground cloves
1/2 tsp. crushed foil
1-2 red chillies finely chopped
4 bay leaves
salt and black pepper
200 gr. long grain rice, washed
330 ml. vegetable or chicken stock
1 large glass of non alcoholic white wine
1 large handful of chopped flat-leaf parsley

Preparation

Preheat the oven to 180c

Preparation method

Heat a dash of olive oil in a pan and fry the chicken and pork.
Transfer the meat to a large refractory baking dish.
Fry the onions and peppers until the onions start to turn translucent.
Add the garlic, tomato paste, tomatoes. chorizo, spices, chillies, bay leaves salt and pepper.
After a few minutes, mix in the uncooked rice.
Stir the rice well so that all the grains are covered with the oil.
Add the rice mixture to the meat in the baking dish.
Pour in the stock and wine and cover the bowl.
Bake the Jambalaya for 1 hour in the preheated oven and stir it 2 or 3 times in the meantime.
Remove the Jambalaya from the oven and sprinkle with a lot of parsley.

Serving tip

If you like it, you can also add some shrimp in the end.

Ps, the non alcoholic wine can be let out and with a lemmon sqeezzd it Works as wel. Better a lime btw

I can’t take credit for making this tasty organic sourdough loaf; got it at a local country bakery at farm store nearby. It was good with just a good slathering of butter, and also tried it toasted for my breakfast …it was a shame to slice it, it was so pretty lol

I feel you on that. I used to have a drink or a few while making dinner. It feels weird making it and not having one but I’m getting used to it

Fried chicken sounds delicious. But We doesn’t fry things often here once in a while I make Buffalo wings or corn dogs but it’s very rare.

I absolutely love Southern food, and I’m impressed by the southerns dedication to fried things, but I can’t justify eating that crazy amount of calories.

I still do count calories even if I try the intuitive eating idea. I’m trying to eat everything I want, but in limited amounts.
So the Monkey Bread was well calculated. :blush:

I assume it’s called that because you can pull out pieces of bread with your hands. Before I tried it I was certain it would contain bananas because why else call it Monkeybread?
But it didn’t, basically it’s a huge cinnamonbun made of small rolls of dough dipped in butter amd sugar/cinnamon,baked together :blush:

I’m extremely allergic to everything nuts or peanuts.
A lot of other foods.

And gluten, but a lot of things can be done gluten free, and sometimes I cheat.
I know it’ll make me sick, but in difference from the nut/peanut allergy it potentially won’t kill me.

And the Swedish kitchen is a huge difference to the Southern one. Sweden have a lot of “healthy” habits. Rye, salmon, potatoes, herring, sourcream, lingonberry, blueberries and so on. Swedish breakfast for example is usually Oatmeal porridge with lingonberry jam and milk. Boiled eggs with Swedish kaviar (don’t try that) and hard bread or really dark rye bread.

I couldn’t believe my eyes when we got cinnamon rolls, bacon and biscuits with jam for breakfast when we where visiting family in the south.

And I absolutely loves biscuits and gravy.
But I have a little bit of a hard time justify eating all that every day. So I’ll mix it and pick the best if both words. Sometimes you just need something extra.
