Sautéed peppers and onions. With some southwest spice
Ground pork with a Tex Mex paste and southwest spice.
Topped with home made salsa or Pico whatever you want to call it.
Must have Jack cheese and crema.
It was pretty good. I done better. It was easy. So that’s a plus.
Served over the rice with lime zest.

Just had dinner a couple of hours ago and it’s taking all my will power to not rip into this :grimacing:

Wifey caught me looking at the Finnish Pancake video you sent me. We, probably me, are going to try them this weekend.
Meanwhile thanks to @KFury I got some avocado today and some chilies and limes to make a nice avocado toast with this new loaf.

I had a sip of rhubarb juice @Milele made a while back. Fell in love with that stuff. Got some rhubarb from friends’ garden and I’ve been processing them for 2 days now, going into day 3 :smile: I NEVER thought I’d go nuts about it :joy: Maybe one day I’ll have a garden of my own :slight_smile:

“Hash” consisting of sweet potato, red onion, garlic, brussel sprouts, and a dozen scrambled quail eggs all pan cooked together in olive oil. Nothing like getting sweet potato and red onion a bit burnt and carmelized, fantastic flavor.

I didn’t intend it, but I realized after the fact that this is probably my first lunch/dinner without meat in…well, several years at least. I was shocked at first but I am somewhat comforted knowing that in a way, I’ve eaten a dozen quails.
