I did these in instant pot pressure cooker. Not as tasty as roasted but still good Butter and sea salt for my half; butter & maple syrup for hubby

It taste just like carrot cake only in a smoothie. Iāll put green food coloring in next time. Maybe that will make it look better.
BTW. I donāt even cook the spinach. I just take the hot cooked ābeautiful lookingā pasta and mix it in a bowl with the room temperature spinach and let the hot pasta wilt the spinach. Then serve.
Donāt forget the parmesan!

You are an amazing cook after I took off my culinary coat and got sober, I was able to look at cooking through a different lense-I was so used to cooking for others, I began to cook for myself and it became therapeutic.
