Foodies Unite #2

We really miss our Tex Mex from all the years we lived in Austin. Especially the queso at Mats Famous El Rancho. And their chili con carne sauce on cheese enchiladas.
Maybe @RosaCanDo has a good carne sauce recipe. All the ones I find are too complicated.

My SO doesn’t like spicy either. I really had to learn how to tone down my cooking for him :grin: I have become his taste tester. If something looks like it might be spicy, I taste the food carefully and if I detect any hint of spiciness, then I can warn him of his possible impending doom.

The smell of basil Is one of my all time favorites. It makes me so happy. I go through phases where il forget about it for a few months then rediscover it and the smell is just so nostalgic… The first smell would be fresh cut lemons. First thing in the morning. When your senses are clear. Lemons are underrated and are balls of bliss lol :joy:

Never heard of it, but I love Buffalo chicken wings and just about anything buffalo sauce flavored. How to you make it, and what do you use it for? Is it anything like queso dip?

It’s delish :yum: it’s basically shredded chicken (I use a rotisserie chicken) with franks red hot sauce, blue cheese (some use ranch) dressing, cream cheese, and shredded Mexican cheese… all mixed together and I cook it in a mini crockpot. Served with tortilla chips. It’s always a hit at parties.

@apes2020 That looks awesome. Especially the mashed potatoes. True story: You can get potato poisoning from eating too many potatoes at once. I found that out the hard way and now have to limit my mashed potato intake :joy:

Very simple Nigel Slater recipe of orzo (first time I had it, very nice) with courgette/zuchini, bacon and grana padano. Works well, got a new one on my repertoire.
