Just giving you a hard time Eric. Seeing that plate of pigs in a blanket brought back some traumatic childhood memories. Mom would put American cheese on everything and call it gourmet. lol
I remember we would have peas or spinach from a can and I couldnāt get up from the table till my plate was clean. I covered it with so much ketchup you couldnāt even see what kind of vegetable was there. lol fun times. Have a good evening my friend.

But I canāt blame my aversion to processed cheese on my childhood. I take full responsibility. Hiking with a long time pal this summer, we were recalling our drinking days in uni, how we would bike to the 24hr Dennyās after the pub to get grilled ādouble-cheeseā (yep, processed) sandwiches and fries. At least we wore bike helmetsā¦
Yes. Laughing Cow. I remember too well. it was one thing my anorexic daughter would eat. I would fill a shopping cart with it. That and canned corned beef hash. Oh the memories . I liked it to though too.

I make these for my little guy whoās quite picky. Itās a great way to get fibre & protein in him. I take oats, add milk (can use milk alternative), ground chia, ground flax, an egg, cinnamon, and ripe banana chopped up. I let soak a few minutes. I pan fry in a touch of unrefined coconut oil for flavour. Taste like a less sweet banana muffin. No sugar, no flour. Can eat warm or cold. He eats it like toast with his hands. I put in his lunch box as alternate to sandwich. No syrup. I enjoy them too Yummy with butter or seed butter on top too
Chicken quesadillas and seasoned frijolitos. āFrijolitosā are what I grew up calling beans, literally means ālittle beansā but itās just a cute name. In this case I seasoned some pinto beans mixed with refried beans and added some homemade salsa verde, they came out super tasty! This is one of those meals where I feel like itās going to be super basic and kind of lame, but then it turns out great, my husband raves, and I feel really good about it. I like when that happens!
