Foodies Unite #2

After all my baking football and I even planted my day lilies that I ordered in May. I made time for pot roast and mash potatoes.

Schwans frozen pot roast that is :crazy_face:
And frozen mash potatoes.
It was actually really good. :yum: I have no more gas in the tank to cook a real pot roast.
Iā€™m wiped out and I donā€™t deserve a drink. Cuz thatā€™s not me anymore.
Sober Sunday.
:pray::heart:

Just giving you a hard time Eric. Seeing that plate of pigs in a blanket brought back some traumatic childhood memories. :crazy_face: Mom would put American cheese on everything and call it gourmet. :rofl: lol
I remember we would have peas or spinach from a can and I couldnā€™t get up from the table till my plate was clean. I covered it with so much ketchup you couldnā€™t even see what kind of vegetable was there. :joy: lol fun times. Have a good evening my friend. :heart:

Sounds like you and my wife had the same mother. And my wife was very traumatized by her mother.
These peas ? :joy:

@Dazercat yes, you are such a good sport! And honestly, if someone put a brick of Velveeta in front of me right now? I could not pass that upā€¦ :joy:

Do you remember the little cheese cubes wrapped in foil - La Vache Qui Rit? Laughing Cow or something? Mom would get those for special occasions only! Like a grey cup party :smile:

But I canā€™t blame my aversion to processed cheese on my childhood. I take full responsibility. Hiking with a long time pal this summer, we were recalling our drinking days in uni, how we would bike to the 24hr Dennyā€™s after the pub to get grilled ā€œdouble-cheeseā€ (yep, processed) sandwiches and fries. At least we wore bike helmetsā€¦ :laughing: :woman_facepalming:

Yes. Laughing Cow. I remember too well. it was one thing my anorexic daughter would eat. I would fill a shopping cart with it. That and canned corned beef hash. Oh the memories :scream:. I liked it to though too.

My mom couldnā€™t boil water :rofl:. Dad did the cooking. Once mom made a meatloaf. She thought sheā€™d be creative and put apples in it :scream::face_vomiting: :nauseated_face::nauseated_face::face_vomiting::nauseated_face::face_vomiting::scream:

I make these for my little guy whoā€™s quite picky. Itā€™s a great way to get fibre & protein in him. I take oats, add milk (can use milk alternative), ground chia, ground flax, an egg, cinnamon, and ripe banana chopped up. I let soak a few minutes. I pan fry in a touch of unrefined coconut oil for flavour. Taste like a less sweet banana muffin. No sugar, no flour. Can eat warm or cold. He eats it like toast with his hands. I put in his lunch box as alternate to sandwich. No syrup. I enjoy them too :yum: Yummy with butter or seed butter on top too

Chicken quesadillas and seasoned frijolitos. ā€œFrijolitosā€ are what I grew up calling beans, literally means ā€œlittle beansā€ but itā€™s just a cute name. In this case I seasoned some pinto beans mixed with refried beans and added some homemade salsa verde, they came out super tasty! This is one of those meals where I feel like itā€™s going to be super basic and kind of lame, but then it turns out great, my husband raves, and I feel really good about it. I like when that happens!

Ooo yum! Iā€™m going to try with GF oats - the egg and banana should be enought to make it stick together, do you think?
